Savory Browned Brussel Sprouts with Lemon Zest

Savory brussel sprouts with a lemon zest topping

Ingredients
  

  • 2 tbsp olive oil
  • 1/2 red onion, sliced 1/4" thick
  • 1 lb brussel sprouts, trimmed and halved
  • 1/2 tsp smoked sea salt
  • zest of one lemon

Method
 

  1. Heat a saute pan over medium heat for 5 minutes.
  2. Swirl in the olive oil and add the onion slices immediately. Cook and stir for 5 minutes until they begin to turn translucent.
  3. Add the brussel sprouts to the pan with the onion. Cover and cook undisturbed for 5 minutes, allowing them to sear on one side.
  4. Turn off the heat, stir well, and let the brussel sprouts sit covered for another 3 minutes.
  5. Sprinkle with salt, and the zest of one lemon. Serve hot.
